Cranberry Pecan Mini Pies

Today I am excited to share a delicious cranberry pecan mini pie recipe. These pies are so fun to make and they are yummy too! Cranberry pecan mini pies are perfect to gift to a friend, neighbor or to just enjoy yourself with your favorite hot drink.

How To Make Cranberry Pecan Mini Pies

The recipe I am using came from my husband’s co-worker. (Thank you, Wendy!) She always makes this pie in a 9 inch deep dish pie crust and it is so delicious. I wanted to make my own version of this pie to gift to neighbors for Christmas and knew that mini pies would be perfect for gifting. Cranberry pecan mini pies were something that I always wanted to try and since I can cook these in a muffin tin, I could make several at on time. It’s a perfect treat to gift to several people on your list. These pies would also be perfect for anytime of the year.

Ingredients for Cranberry Pecan Mini Pies

  • Pillsbury Mini Pie Crusts
  • 3 eggs lightly beaten
  • 1 cup corn syrup
  • 2/3 cup sugar
  • 2 tbsp butter,melted
  • 1 tsp vanilla extract
  • 1 cup chopped pecans
  • 1 1/4 cup fresh cranberries, cut in fours
  • 1 tbsp orange rind, grated
  • muffin tin
  • cupcake liners (optional)
  • Clear bags and ties
  • 1 9 inch unbaked deep dish pastry shell (If you are making a pie)

Preheat oven to 350 degrees F. In a bowl, stir together the eggs, corn syrup, sugar, melted butter and vanilla until well blended. Stir in pecans, cranberries and orange rind.

Set your Pillsbury Mini Pie Crusts out at room temperature for 15 minutes. Unroll the crust and separate the mini crusts. Place the crusts in an ungreased muffin pan and add your cranberry pecan pie mix into the mini pie shells. Bake for 30 minutes or until done. Cool pies and remove from muffin tin.

If desired add mini pies to cupcake liners and add to clear bags and tie with a pretty ribbon.
